Creamy pesto with Pinenut crusted chicken

Creamy pesto

Blender:
1/4 cup pine nuts
1 cup basal
2/3 cup parsley
1 or 2 garlic
1 whole lemon
Parmesan
Salt(not too much!!) and pepper
Stream in evoo
(add a little sugar of needed)

Blend until pasty

In pan heat 1 TBS butter
1 cup fat free half and half
Bring to boil
Add pesto blend all together
Taste to season
Add diced roman tomato
(serve quick!)

Pine nut crusted chicken

Serve over whole wheat pasta of choice
